with passionfruit, jalapeno and avocado (gf)

Foie Gras Parfait
with truffle butter, chamomile jelly and toasted brioche

Heritage Beetroot Salad 
with truffle and parmesan mousse (v, gf)



Forest Mushroom Risotto 
with slow poached egg, asparagus and pecorino (v, gf)

Roast Suckling Pig 
with roast sprouts, creamed parsnips, bacon, burnt apple, walnuts and pea shoots (gf)

Crispy Confit Duck a la Orange  
with snake beans, choi sum and spicy Sichuan eggplant (gf)

Rack of Lamb
with Jerusalem artichokes, curd, sweetbreads, mushrooms, jus (gf)
